This meatloaf adds some Cajun seasoning and cayenne pepper for extra zing, and you can also make this heart-healthy by using lean ground beef, egg whites, and low-sodium options. Yummy veggies are incorporated right into this spicy meatloaf recipe. It originally calls for chopped onions, celery, and bell pepper, but you could likely swap out other veggies if you like. First thing I like to do is chop my veggies. I’m personally not a big fan of onions, so I compensate by substituting additional bell pepper.
Then mix together ground beef, the chopped veggies, egg whites, Worcestershire sauce, bread crumbs, and various yummy spices like Cajun seasoning (a necessity in Cajun meatloaf), cumin, and a little salt, pepper, and cayenne powder. I love to use my hands to mix this: it feels delightfully squishy and is oh-so-messy but oh-so-fun, like playing as a young child! I also like to use a kneading motion to help mix the spices and eggs into the meat. Then once everything is mixed together well, form it into a loaf and set it in a baking pan. The original recipe calls for a baking pan rather than a loaf pan to help cut down on the baking time (since air can circulate around the meat).
Then bake as normal! You may use either a conventional oven setting or a convection oven setting. Convection heating differs from conventional oven settings by using a fan to move hot air around inside the oven. If you use the convection setting, just decrease the oven temperature by 25 degrees. I’ve found that’s applicable to many recipes I’ve tried, and I use convection with this spicy meatloaf recipe all the time with no problems. Then once time’s up, you have a delicious Cajun meatloaf that’s full of flavor and is sure to satisfy!
